01 / ABOUT THE PLACE

About this place

Biting into the skewer of alternating gizzard and chicken skin brings a lively contrast: the tender snap of gizzard alongside the supple, savory fat of chicken skin. Coated in a sweet-savory tare sauce lifted by refreshing sansho pepper, the signature "Mix" skewer is the quintessential order when taking a seat at Yakitori Torihashi in Numabukuro.

Along the 8-seat counter, guests order unpretentious staples such as negima, cartilage, crispy skin, and chicken hearts. Between rounds of skewers, a bowl of slow-simmered motsu offal stew or crisp fried karaage chicken provides satisfying variety. Draft beer and Hoppy flow freely, but the Akita sake curated by the master and okami—both originally from Akita Prefecture—pairs especially well with the rustic, comforting food.

The quiet rhythm of the owner tending the charcoal grill balances with the okami's cheery hospitality, easing conversation among guests along the narrow counter. Freshly grilled skewers are also available for takeout out front, making this cozy neighborhood shop a regular stop on the evening walk home.
